How “Ghost Kitchens” Are Changing the Face of Vancouver’s Restaurant Industry

How do you open a restaurant without opening a restaurant? For some Vancouver food entrepreneurs, the answer is a “ghost kitchen.” as Carnitas El Rolys, where Tortillas Santa Rosa are part of every dish.

Vision of a Mexican immigrant / La vision de un inmigrante mexicano

When you first meet Carlos, Santa Rosa’s CEO and owner, you may glimpse a visionary of his business, a hard-daily worker, father of a family, lover of helping the community, but above all, you can see the passion he spreads all over the place while interacting with his team. Together, they are all in charge of their lines of production and Don Carlos has always tried to inspire the team with the love he feels for the equipment, from the simplest tool. He feels each component has a soul of its own and somehow communicates with each worker. Steel and human beings combine to produce food all along.

Each machine that operates within the roof of our plant, he says, has a personality, and whoever works here will always see them as noble machinery that contributes to achieve the best of each product.

On one occasion, while seeing the tortilla transfer belts, he had the idea of placing coloured lights to differentiate each part of the process. Now, machinery interacts with LEDs and colors In his words: “We work daily with these machines, we spend a lot of time with them, we interact, we produce, why shouldn’t we make them good looking to have fun together.”

For Don Carlos, everything comes down to two aspects: his work team and the passion to generate the best quality products in BC.
